Hearty Vegan Bolognaise 2

Ingredients:
- 1 1/2 tablespoons olive oil
- 1 large onion, diced
- 4 garlic cloves, minced
- Mixed herbs
- Salt
- Freshly ground black pepper
- 1 tube of tomato paste
- 1/2 cup (120 mL) dry red wine
- 3 cups (720 mL) vegetable broth
- 1 cup (185g) red lentils, soaked
- Plumped tomatoes
- Carrots (grated and diced)
- Marmite
- Fish sauce
- Nutritional yeast
Instructions:
- Soak 1 cup of red lentils in water
- Finely chop 1 large onion, grate 3/4 cup of carrots and dice the remaining carrots, and mince 4 garlic cloves.
- In a large pot or casserole dish, heat 1 1/2 tablespoons of olive oil and cook the onions until translucent.
- Add the tube of tomato paste and cook for a few minutes.
- Stir in the grated carrots, minced garlic, and mixed herbs, and cook until the mixture starts to stick to the bottom of the pot.
- Drain the lentils and add them to the pot, along with 1/2 cup of dry red wine. Scrape the bottom of the pot to release any browned bits.
- Add the diced carrots, tomatoes.
- Stir in the broth.
- Add the combination of marmite, nutritional yeast, and vegan fish sauce. Season with salt and pepper.
- Simmer until the stock has reduced and the carrots are soft, approximately 1 hour.
- Serve over spaghetti and top with cheese if desired.
