Hearty Vegan Bolognaise 2

Vegan Bolognaise

Ingredients:

  • 1 1/2 tablespoons olive oil
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • Mixed herbs
  • Salt
  • Freshly ground black pepper
  • 1 tube of tomato paste
  • 1/2 cup (120 mL) dry red wine
  • 3 cups (720 mL) vegetable broth
  • 1 cup (185g) red lentils, soaked
  • Plumped tomatoes
  • Carrots (grated and diced)
  • Marmite
  • Fish sauce
  • Nutritional yeast

Instructions:

  1. Soak 1 cup of red lentils in water
  2. Finely chop 1 large onion, grate 3/4 cup of carrots and dice the remaining carrots, and mince 4 garlic cloves.
  3. In a large pot or casserole dish, heat 1 1/2 tablespoons of olive oil and cook the onions until translucent.
  4. Add the tube of tomato paste and cook for a few minutes.
  5. Stir in the grated carrots, minced garlic, and mixed herbs, and cook until the mixture starts to stick to the bottom of the pot.
  6. Drain the lentils and add them to the pot, along with 1/2 cup of dry red wine. Scrape the bottom of the pot to release any browned bits.
  7. Add the diced carrots, tomatoes.
  8. Stir in the broth.
  9. Add the combination of marmite, nutritional yeast, and vegan fish sauce. Season with salt and pepper.
  10. Simmer until the stock has reduced and the carrots are soft, approximately 1 hour.
  11. Serve over spaghetti and top with cheese if desired.
